Shio 42 | $13

Hakodate is a city on the island of Hokkaido, Japan and is the birthplace for this style of ramen which happens to share nearly the same latitude as Grand Rapids! This is important to note because their weather allowed for this lighter, sea salt-based soup to flourish there, making this also the perfect soup pairing for us here in West Michigan. It’s umami, simple, and clean. Served with traditional noodles, rich broth, scallions, sprouts, kikurage, naruto, nori, negi oil and our house-made umami butter.

Miso | $13

This happens to be the favorite choice of my mother and the anime character Naruto! It is sweet, complex, and buttery, made with our house-made traditional noodles and rich broth. Served with scallions, sprouts, kikurage, naruto, nori, rayu oil and our house-made umami butter.

Shoyu | $13

This soup shares the birthplace with my mother’s home town in Yokohama. Slightly more complex than shio, this soy sauce-based bliss is composed with our house-made traditional noodles and rich broth. Served with scallions, sprouts, kikurage, naruto, nori, bonito, and our house-made umami butter.

Zessan | $15

This is our flagship tonkotsu ramen where Japan meets the Midwest. This special tare yields a nutrient-rich, savory soup. Served with our proprietary noodlepig noodles, pork bone broth (tonkotsu), scallions, sprouts, kikurage, naruto, nori, with black garlic and rayu oil. (contains bacon, bonito, and butter)

Thai Coconut Curry | $13

Mild Thai yellow curry, coconutty, with hints of cilantro and lemongrass, this Asian fusion is sure to please. Made with our house-made Traditional noodles and rich broth. Served with scallions, chopped peanuts, cilantro, red bell peppers, and lime. Topped with bonito dust and rayu and black garlic oils.

Pozole | $14

A nod to the Hispanic side of my family. Our guajillo-based pozole offers the best of both worlds into one bowl. Comfort, complex, with a hit of spiciness, just like my Mexican wife. Served with traditional noodles, pork bone broth (Tonkotsu), hominy, chopped onions, daikon radish, lime, cilantro, and rayu oil.

Kare | $14

Katsu Kare is a famous dish which combines two Japanese dishes together: Kare rice (Japanese-style curry) and tonkatsu (breaded pork cutlet). Here, we use our house-made Noodlepig noodles and rich pork bone broth (tonkotsu), served with bone broth, shaved cabbage, pickled red ginger, scallions, nori, and spicy rayu oil.
